RAW COCONUT CREAMSICLE POPS on HALLOWEEN NIGHT
It was Halloween and a good one at my friend Courtney Rile's place. Courtney (dressed as Edie Sedgewick) knows all about my food allergies and way of life, likes and dislikes. She has traveled the globe with me and back. I adore her.
Courtney LOVES making gelato and popsicles and let me say, she is darn good at making it all. She followed raw food chef, Matthew Kenney's recipe for raw vegan coconut creamsicles in his book, Everyday Raw. Made of fresh Thai coconut meat, orange zest, orange juice, and agave, these pops are sure to please even the most devoted cream and milk ice cream person. A VitaMix is much needed to smooth out the consistency. But, if you do not have one you simply have chunky style.
